How to chiffonade
To chiffonade basil , roll one to three leaves lengthwise. With
a sharp knife, cut the roll at an angle into very thin slices.

AWARD WINNING PIZZA
Note:
Adding to much cheese will only melt the cheese. The cheese should
be roasted until it caramelizes to get its optimal flavor.
Preheat pizza stone in convection oven to 500 Degrees.
Prepare the sauce:
Finely chop 8 oz of tomato's almost to a puree. Do not use a food
processor, it will cut the seeds and will add a bad flavor to the
sauce.
Roll fresh basil like a cigar and chiffonade (slice fine). Do not
chop. Mix three prepared leaves to the tomato sauce.
Add one teaspoon onion powder
Add one half teaspoon pepper.
Add one half teaspoon salt.
Add two minced garlic cloves.
Toppings
Place pizza dough on heated pizza stone. Spread the sauce over the
dough
Mix 4 ounces mozzarella and 2 ounces parmesan. Spread evenly over
the sauce.
Add other toppings (onions, mushrooms, pepperoni, etc.)
Bake
500 degrees for 10-12 minutes until the cheese starts to caramelize
